Guanciale (gwan-chalie), an Italian bacon made from hog jowl, is a prized gourmet delicacy in central Italy. Here at Edwards, we call our hog jowl bacon Jowciale (jauw-chalie). It's dry-cured, hand-coated with fresh cracked peppercorns, then smoked over smoldering hickory logs for nearly 24 hours.

The result is a meat with a noticeably richer flavor than typical bacon. Which explains why so many of our chef customers use it in dishes such as spaghetti alla carbonara and pasta all'amatriciana, and as a flavorful seasoning meat in cooked greens, salads, soups and chowders. 1 piece, average weight: 1.5 lbs.

i just received this and shared with friends and we all loved it, gotta order a bunch more since it doesn't last around us carnivores.

This is a perishable product. It has been cooked or partially cooked. It is shipped frozen possibly with gel packs and must be refrigerated after arrival.
 
Shipping & Delivery Information
Shipping charges are additional to merchandise prices. We ship via UPS, which requires a street address for delivery. For this reason, we cannot ship to P.O. Boxes. Also, we do not accept C.O.D. orders. All perishable items are shipped on Mondays and Tuesdays only, and should be refrigerated or frozen immediately upon receipt. All products shipping to Alaska, Hawaii, or Puerto Rico must ship by Second Day Air.
 
How are shipping charges determined?
We calculate actual UPS shipping charges based on the shipping method, the weight of the product, and the zip code the product is shipping to. If you purchase several products to ship to the same address, the total shipping charge will likely be different than the estimated charges for each individual item, because the items can be combined into a single shipping container.
 
What shipping methods are available?
Standard Ground shipping is the least expensive, but it is only available for perishable products that ship with 1-2 day transit times. See UPS transit days map below. Otherwise, Second Day Air is required for all perishable items. These items are identified in our catalog and on the website with a blue plane

Expedited Shipping
Next Day Air and Second Day Air are options for any product if you need a guaranteed delivery date. You will be able to choose your preferred delivery date during the Checkout Process and see the estimated shipping charges for each Shipping Method.

Storage: Refrigerate upon receipt.

Preparation: Cooking is required.

Fry: Slice 1/4 -inch slices. Fry at 350 degrees F. for 5 minutes. Turn once, fry 5 minutes until brown.

As Seasoning Meat: A tasty complement to green beans or collard greens. Add Jowciale to a deep pot of water with beans or greens. Cook together until beans/greens are done and Jowciale reaches 160 degrees F. Remove Jowciale and let it cool. Slice and serve with beans/greens.

Shelf Life: 3-4 weeks refrigerated, 6 months frozen.
