Sausage-Stuffed Squash

Ingredients

  • 1/2 lb sausage
  • 1/4 teaspoon salt
  • 1/2 cup herb stuffing
  • 1/4 cup onion, chopped
  • 6 squash
  • 2 1/2 tablespoon Parmesan cheese

Directions

1. Cook squash for 8 to 10 minutes. Cut lengthwise; remove pulp (reserve). If using Edwards Fresh Sausage Patties, chop the sausage into small pieces before frying. Cook sausage and onion. Drain. Stir in pulp, stuffing and salt. Stuff the squash. Sprinkle with Parmesan cheese. Bake at 350 degrees for about 30 minutes. Courtesy of: Sandra D. Crocker
