- Q: What is the white material on the ham I received?
-
A:
This is perfectly harmless mold that appears on uncooked country hams as a natural result of the aging process. Remove it before cooking by washing the ham surface with hot water and a stiff brush.

- Q: The product I received came without ice & is warm to the touch. Is it safe to eat?
-
A:
Yes, our non-perishable and semi-perishable products (e.g., cooked & uncooked smoked hams, sausage, bacon, etc.) are completely safe for up to 10 days without refrigeration.
Perishable products (such as spiral-sliced hams, seafood, fresh sausage, and turkey breast and pork loins) are shipped frozen for arrival within 2 days or less. Identified with red & blue airplane symbols in product descriptions, these items are shipped frozen in coolers with ice. If you receive perishable products that have partially thawed, simply put them in your freezer to refreeze. Perishable ham, sausage or turkey may be stored in your refrigerator for up to 2 weeks without refreezing.

- Q: The package says “Keep Refrigerated,” yet there’s no ice in the box. Is this a problem?
-
A:
No, not at all for raw or cooked country cured hams, Edwards bacon, and Edwards smoked sausage. We didn’t forget to add ice to your shipment. The “Keep Refrigerated” tip on the box is just a reminder to put the product into your refrigerator immediately upon receiving it. Seafood, fresh sausage, and sweet ham products do need gel packs and coolers. If the product comes in a corrugated box, it was ok to ship without gel packs or dry ice. If the product is in a cooler, it means the product is perishable and should have dry ice or gel packs. By the way, when we use dry ice, it will typically dissipate during shipping. This leaves an empty plastic wrapper. If there is dry ice left, be extremely careful when removing the ice as it can cause a “dry ice burn” to your skin. Leave the leftover dry ice in a well ventilated area until it evaporates.

- Q: The cooked ham I received was wet. Why?
-
A:
This natural moisture results from our ham cooking process. Placing the ham in its cooking bag and cooking it in hot water sometimes causes moisture to leach from the ham into the cooking bag.
This is not harmful in any way.

- Q: The ham I cooked tastes too salty. Can I reduce the salt intensity?
-
A:
A too-salty country ham taste is usually the result of cutting ham slices too thick. With its natural flavor intensity, country hams must be sliced paper-thin to properly present their uniquely American flavor profile. To ease thin-slicing, use a very sharp knife. If flavor is still to salty, consider adding a brown sugar or honey glaze.
